Spring onions, Corn & Pepper Sauce

Serves: 2 (as dinner)
Spring Onions (with greens), Finely Chopped4 Cups
Garlic, Sliced2 Cloves
Sweet Corn Kernels¼ cup
Sun-Dried Tomatoes, Soaked and Sliced4 (100gms)
Red Pepper, Cut into Thin Slices1
Celery, Chopped2 tbsp
Butter4 tbsp
Salt & PeperAs per Taste
Cheese, Grated (For Garnish)3 tbsp
Chili Flakes1 tbsp
Pastallio Pasta (Pipette/Penne)200g

Method

  • Heat the butter in a pan.
  • Add the spring onions, garlic and the corn kernels. Sauté for 5 minutes.
  • Add the sun-dried tomatoes, red pepper, celery, salt and pepper. Mix well.
  • Add the Pastallio Pasta. Mix well.
  • Garnish with cheese and chili flakes.
  • Serve immediately.
