Spinach Verdi Sauce

Serves: 3 (as dinner)
Spinach Leaves, Finely Chopped4 Cups
Spring Onions with Green, Finely Chopped1 Cup
Garlic Paste1 tbsp
Red Bellpepper, Sliced½ Cup
Cheese Spread½ Cup
Milk1½ Cup
Butter3 tbsp
Salt & PepperAs per Taste
Cheese, Grated4 tbsp
Pastallio Pasta (Fusilli / Spaghetti)250g

Method

  • Blanch the spinach in boiling water for one minute. Drain and refresh in ice-cold water. Drain again and make a puree using a blender. Keep aside.
  • Heat the butter in a pan. Add the spring onions and garlic and sauté for 2 to 3 minutes.
  • Add the red bellpepper and sauté for another 2 to 3 minutes.
  • Add the spinach puree, cheese spread and milk. Add salt and pepper as per taste. Mix well.
  • Bring it to boil while stirring continuously.
  • Add boiled Pastallio Pasta. Mix well.
  • Serve immediately. Serve hot. If need be add water/milk to re heat the sauce.
